Go for a dual-head thermostatic model such as the Midas 220 or the Deco Thermostatic Dual Head. These combine a large drencher or rainfall head with a handset so you can have a deluge and still use the handset for targeted rinsing; some models even let you run both functions together. My house has a combi boiler, will these bar mixer showers work with it?
